Carrion Centaur/Lord/Lady Reanimation... how does it work?

Are there any tips on using these guys? Does it help to have unburied corpses where I use them to reanimate? Can I just pile them in my cities? Should I take them where big bad units have just died?

The strategy index stickied at the top of the page is a fantastic resource, so use it. It's no longer maintained unfortunately, but it links to a lot of very useful strategy discussions. (And also some useless ones, but still...)
