Default Forts and supply

Last night I won my first victory. C'tis was trapped in it's Last castle. However, I was never able storm the castle, the prompt said I needed more men. Forty turns and unknown hundreds of troops later his dominion hit zero and I won that way. The wrath of god was going for over thirty turns but evertime I looked at the province it would says, 'this province appears to hold 1680 hostile troops' . What type of castle can hold this many troops?

Two guesses. One is that you never had enough troops to break the castle faster than he could repair it and the other is that those 1k+ troops didn't need supplies (undead/summons/constructs).

And since you're from Bellevue, you must know my old friend Molly, she married a guy named Jim from down here in Cali (What's that you say? You don't know everyone in Bellevue? I'm shocked )

castles can hold an infinite number of troops in dominions. In fact, unless you are storming the fortress, most of the troops are held in dessicated state in special chambers. When the alarm ring, someone with a sponge get the guys and revive them so they can man the walls.

This important remark said, if they have 1600 units and they dont starve, then it means that, yeah you guessed it, that they dont eat. So for Ctis I would say they are undead lizards.

If you cant storm the castle, then either you put temple around to kill the dominions, or send some overland spells like 2-3 Flames from the skies. it should reduce the number by 75% after 3 strikes.
I'm surprised that with 1600 units the AI didnt try to break siege by the way.
