Puke this works fine for one or may be two enemy planets especially their home world, but if they have already 5-10 colonies I would disperse my fleet completely and be very vulnerable to counter attacks. And to blockade a new colony with 10M population and 1-2 facilities with three of my costly ships seems not very efficient to me. So in this case I eliminate all their minor colonies first one after the other with my entire attack fleet and then as the fatal blow I blockade their homeworld and demand surrender. However there are now races in the game that will never surrender!

Hmmm....it ain't a fleet if it has less than a hundred ships...anything less is a defensive force

Actually I have found that the best staring startegy if you plan to conquer races is to research plague bombs and drop them on the enemy planets. The plague causes riots, so the AI stops producing, then they can't maintain a fleet, do any research, etc. and you can take your time picking them off since they won't be bale to cure their population, plus if the planet goes to 0 population....you drop 1 troop and the planet is yours, then cure and build away. A way to *ahem* bypass the race colony system(used to work but I've been genocidal so long i dont know if it will work anymore) is to drop pop at the same time you drop troops(during tactical combat).

A fleet with 100 ships? In my current game I have the most ships I have ever had at one time, 60. I wouldn't know what to do with 100 ships.
