Unit editor
Is there any way to create new units or edit the old ones? Tell me if there's some sort of guide or even an editor..

Yes, yes, yes, and no.
The keyword to look for is "mod". There are alot of threads on modding, there is a doc on modding in the doc directory of your dominions 2 (if you have the full game). But there isnt an editor yet. Most of the tools for modding are 3rd party things created by Users

I don't know about the legal issues, since you could simply download a finished mod to see the editing commands. The problem you're facing is that most of the editing tools have been added to the full game through patches and are not part of the demo.
Simple stat and equipment editing should still work though.

I can give you access to the docs. In fact Illwinter has posted htem before at the illwinter.com site. But Im not sure if the demo can run mods

Demo has been updated atleast once times, I think the latest Version is 2.08. Demo doesn't run mods, or atleast is shouldn't. I haven't tried it out myself, but I have a vague idea of reading that from this forum...
