Actually there is an immortality spell... Alteration 7 'Phoenix Pyre'.
Immortality is also a permanent trait available to a few pretenders and summons.

If you're looking to keep your important commanders alive have them 'pass around' the unique armor called "armor of virtue". After one battle the commander should receive the ritual of returning mark and can then switch back to his original armor and allow another commander to temporarily wear the "armor of virtue". This ritual of returning mark means if they are struck even once in battle they will be teleported back to your castle... depending on your unit and what you're fighting the one strike shouldn't kill.

Phoenix pyre isnt immortality, they both have completely different effects. Immortality lets you come back to your capitol if you die in your dominion where-as phoenix pyre lets you explode and reappear on the battlefield if you die unless your too tired.

IIRC Wight mages aren't immortal, they're just undead (so don't really age for example).

There is no such thing as immortality for sale in Dom3. There is the Elixir of Life which will resurrect a commander killed in battle (during battle, so he could be killed again) and the other methods mentioned. That's it.
The only way to get immortality would be to morph the caster to an immortal form, but that shapechanging spell is random and only a handful of the ~1800 creatures in the game have immortality to begin with...

I wonder if the Polymorph spell is completely random? Does it cycle through all 1800 or so troops? If so, you might end up turning your ultra-powerful rainbow Pretender into a hoburg with a stick (or a hoburg ON a stick, for that matter)

The spell can feeblemind your pretender... I heard its possible it can even kill the pretender. The spell doesn't randomly select one of the 1800 different units, but only from a selection of nature type units.

I ran a bunch of test with it and imho it is not worth the risk. I was killed and feebleminded frequently and most usually turned in to a useless mammal. Of the dozens of times I tested it only twice was I turned in to a foul spawn with usable hand head body and misc slots.
usually it was a dog or something else. Maybe 3 or 4 of the forms were drake level of power or higher.

It'd be worth it if you had a chance to turn your Pretender into like the Hunter of Heroes or something. Not so much if the best you can score is a drake or whatever, if you might also turn him into a headless freak with one arm, three legs, and a furry tentacle.

In dominions_2 I recall the best unit being an ettin.
