My question is, what's the "plow" doing in 0:35 ? I have never seen anything like this attached to an artillery unit before, at least not in the front. Is it even a plow?

Plough on front - probably used to dig in, could be used to clear routes when deploying off-road (e.g. of fallen trees?). Same as for the S-tank, etc. Maybe its to level off a firing platform that is too bumpy.
Only one has it - so whatever use it is specialist (leads columns and clears debris?), or maybe just for trials?.
It's most probably not a recoil buffer like tube artillery rear spades - rockets dont have recoil to abate. And these things offload them to the flank anyhow.

Nice video!
This looks to me to be the RM-70 MLRS which, according to wikipedia, can be provided with a snow plough SSP 1000 or a dozer blade BZ-T to arrange its own emplacement or to remove obstacles.
