All priests (holy commanders) have the spell "banishment", which is effective against undead troops.
There are many other spells which are very effective against the undead (e.g. dust to dust, holy pyre, etc.).
Undead troops are also easily hurt by flaming arrows and similar support-type booster spells which the AI cannot, seemingly, cast (why??).
Undead hordes are, in other words, not nearly unstoppable.
