And that one isn't me - already red dominions approaching my capitol on two, maybe three sides, and a friendly domain reversed into neutral as my not-so-immortal assaulted it.

Ok Turn #4 is ready...
Looking at the graphs(which we apparently have enabled), it looks like a few of our competitors went for conquests on turn 3... pretty reasonable, not the way I'd go, but reasonable to be sure...
Let's do some turns.

As one of said conquistadors, I'll just say that it largely depends on one's neighbors. I saw a weak force, I saw decent income and resources which my capital needs, and I had an idling warlord with a more-than-capable force. Why wouldn't I take the province at that point?

I don't think it's possible to disable graphs in Mosehansen games, unhappily.
Attacking on turn 3 is, of course, pretty easy if you picked up mercs on turn one or two.
Hmm, now we're just waiting on sergex...
